Quinoa Flatbread Recipe

1 cup dried quinoa*
1 cup water (plus more for soaking)
Optional: seasonings of your choice*
Directions
- Rinse dried quinoa, and then add to a large bowl with enough water to cover the quinoa by a inch or so. Soak overnight in the refrigerator.
- Preheat oven to 400 degrees Fahrenheit.
- Drain and rinse the soaked quinoa and then add it to a high speed blender.
- Add 1 cup of water to the blender. Blend until you have a smooth batter that will be like a very thin pancake batter. If using spices, add them to the blender and then pulse to combine.
- Divide the batter onto two baking sheets lined with parchement paper or silicone mats, and spread the batter to ⅛ to ¼ inch thick.
- Bake for about 20 to 25 minutes, or until the flatbread is fully cooked through in the center and the edges start to brown.
- Use as a sandwich bread or wrap, or cut into cracker shapes and bake again until crispy.

Notes
- You can also use red lentils or rolled oats instead of quinoa. Red lentils will need to soak overnight like the quinoa for best results, but rolled oats do not need to soak. For each version you will use about 1 cup of water, but you may need to adjust this up or down. You want the batter to be thin, but not runny. It should hold it’s shape at about ⅛ to ¼ inch thick when poured onto the sheet pan.
- You can add savory spices such as granulated onion and garlic, various herbs, or your favorite savory spice blend. Or you can make it sweet by adding cinnamon, nutmeg, and maybe some date sugar.
