Try this apple pie baked oatmeal for breakfast, snack, or dessert! It’s great warm or cold, and you can eat it plain or dress it up with some nice cream and date syrup! Sweet potato nice cream recipe coming soon, so stay tuned!

Apple Pie Baked Oatmeal

Ingredients

  • 1½ cup steel cut oats

  • ¼ cup date sugar (more or less to taste)

  • 1 teaspoon vanilla powder (or extract)

  • 2 teaspoons cinnamon

  • 2 tablespoons ground flaxseed

  • 1½ cup mashed banana (about 3 large bananas)*

  • 1½ cup diced apples (with or without skin)

  • 1 cup soymilk

  • 2 cups water

  • Optional: raisins

  • Optional toppings: nice cream, date syrup, or maple syrup

Directions

  • Preheat oven to 375 degrees Fahrenheit.
  • Add all ingredients to a large mixing bowl and stir to combine everything well.
  • Pour mixture into a 9 by 13 inch casserole dish. Use a silicone dish or line with parchment paper for easy cleanup.
  • Bake for about 1 hour. Oats should be cooked through and top will be dry to the touch.*
  • Enjoy warm out of the oven on it’s own or top it with nice cream and date syrup! Also delicious served cold. Store in the refrigerator for up to 4 days.

Notes

  • You can substitute pumpkin puree or applesauce for the mashed banana.
  • These will bake into a soft cake-like bar, but if you want a more traditional oatmeal texture, you can either add more liquid or bake for a shorter time.
