Chocolate Chestnut Butter

Chestnuts are a wonderful low fat alternative to other kinds of nuts. If you love nut-butters, but want to reduce the fat content, this Chocolate Chestnut Butter is a great option! While they may be challenging to find in every local grocery store, chestnuts are easily available to order online.*

Ingredients

  • ½ cup chopped dates (or more if you like it really sweet)

  • ¼ cup plant-based milk

  • 5.29 ounce bag of roasted chestnuts

  • ¼ cup carob powder (or cocoa powder)

  • 2 or 3 tablespoons aquafaba (liquid from cooked chickpeas/beans)

Directions

  • Place chopped dates and milk together in a small bowl or measuring cup and set aside to soak 10 to 20 minutes.
  • Optional: Preheat oven to 375 degrees Fahrenheit. Place the pre-roasted chestnuts on a parchment-lined baking sheet and roast again for about 5 to 10 minutes to enhance the roasted flavor.
  • Add all ingredients to a small food processor* and blend, stopping occasionally to scrape down the sides. Add more milk or aquafaba as needed to achieve desired consistency.
  • Store in the fridge for 3 or 4 days. Enjoy with fresh fruit, whole grain toast, or with a bowl of oatmeal.

Notes

  • Depending on the size of your food processor bowl, you may need to double the recipe to ensure it blends well, or use a smaller processor for a single batch. In my 10-cup food processor, I can make a single batch, but it turns out smoother if I do a double batch.
