Chocolate Pistachio Cookies

- Dry Ingredients
3 cups rolled oats
1 cup whole wheat flour
1 cup date sugar
2 teaspoons vanilla powder
3 teaspoons cinnamon
1 teaspoon baking soda
2 teaspoon baking powder
¼ cup powdered almond butter
½ cup carob powder (or cocoa powder)
Optional: ½ cup chopped pistachios
- Wet Ingredients
6 tablespoons aquafaba (liquid from chickpeas)
1 cup plant-based milk (I use soymilk)
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Add all dry ingredients to a mixing bowl and stir to combine.
- Add wet ingredients to the dry ingredients and stir until everything is just combined.
- Scoop onto silicone or parchment-lined cookie sheet using a 2 or 4 tablespoon cookie scoop.
- Bake for about 10 to 15 minutes, until cookies are slightly brown on the bottom and easily lift off the tray.
