Mixed Grains in the Instant Pot

Cooking grains in the Instant Pot is so easy. When cooking on the stovetop, my grains always boil over as I’m working on something else, so I love that the IP is hands free. Just dump your chosen grains and liquid, set it, and walk away. Then you will have a big batch to eat throughout the week or to freeze and keep on hand for a quick meal.

Try to pick grains that have similar cooking times. For this recipe I’ve chosen a gluten-free mix of brown rice and sorghum. But you can cook any grains you like: wheat berries, barley, millet, rye berries, and more. You may need to add to the cook time for some grains.

Ingredients

  • 1 cup sorghum

  • 1 cup brown rice

  • 5 cups vegetable broth or water

Directions

  • Rinse your grains and add to a 6-quart Instant Pot liner with the liquid. Stir everything and secure the lid.
  • Pressure cook on high for 27 to 30 minutes. It will take about 10-15 minutes to come up to pressure.
  • After the cook time is complete you can do either a quick release or a natural release and then drain any excess liquid.
  • Serve alongside soups, stews, or stir frys, or portion out into freezer safe containers to keep on hand.

Notes

  • Another variation I’ve done is ½ cup sorghum, ½ cup brown rice, and 1 cup millet with 4-5 cups broth or water, 30 minutes high pressure. This one firms up quite a bit when cold, so when reheating you will need to add water and break it apart.
  • Feel free to add spices to your grains to flavor as they cook, but I like keeping it plain so I can use throughout the week. That way I never get bored through the week and can add different spices every day.
