My Go-To Oat Groats Breakfast Porridge

Ingredients

  • 2 cups whole oat groats

  • 3½ cups water

  • 10- or 12-ounce bag frozen riced cauliflower

  • 15-ounce can plain pumpkin puree

  • 1 tablespoon pumpkin pie spice

  • Optional: 5 chopped medjool dates

  • Optional: Add your favorite fruits, nuts, seeds, or any other toppings

Directions

  • Add oat groats, water, cauliflower, and dates, if using, to a 6-quart Instant Pot. Stir to combine and break up any large clumps of the cauliflower.
  • Close the lid and set to cook at high pressure for 20 minutes.
  • Allow the Instant Pot to natural release for 40 minutes before opening.
  • Add pumpkin and pumpkin pie spice and stir well to combine.
  • Serve with your favorite oatmeal toppings. I love to add blueberries and ground flaxseed.
