My Go-To Oat Groats Breakfast Porridge

2 cups whole oat groats
3½ cups water
10- or 12-ounce bag frozen riced cauliflower
15-ounce can plain pumpkin puree
1 tablespoon pumpkin pie spice
Optional: 5 chopped medjool dates
Optional: Add your favorite fruits, nuts, seeds, or any other toppings
Directions
- Add oat groats, water, cauliflower, and dates, if using, to a 6-quart Instant Pot. Stir to combine and break up any large clumps of the cauliflower.
- Close the lid and set to cook at high pressure for 20 minutes.
- Allow the Instant Pot to natural release for 40 minutes before opening.
- Add pumpkin and pumpkin pie spice and stir well to combine.
- Serve with your favorite oatmeal toppings. I love to add blueberries and ground flaxseed.
