Ingredients

  • 2 cups roughly chopped dates

  • 1¼ cup water

  • 1 tablespoon tahini* (optional)

  • 4 cups old fashioned rolled oats

  • 1 teaspoon vanilla bean powder

  • ½ cup chopped walnuts and pecans* (optional)

Directions

  • Soak the dates in the water for about 10 minutes.
  • Meanwhile stir together the oats, vanilla bean powder, and nuts (if using) in a large mixing bowl and set aside.
  • Once the dates have soaked, add them with the soaking water and the tahini (if using) to a high speed blender or a food processor, and blend until a paste forms.
  • Add the date paste to the mixing bowl with the oats, and stir to combine really well.
  • Press the mixture into a silicone or parchment-lined baking dish that is about 8 by 12 inches (or larger depending on how thick or thin you want your granola bars).
  • You can slice and eat the granola bars now, or bake for about an hour at 250 degrees Fahrenheit until the granola bars no longer feel sticky on top.
  • Allow the dish to cool and then slice into whatever shape you like,. Store in the fridge for up to 4 or 5 days or in the freezer for weeks.

Notes

  • You can either omit the tahini or swap it with another nut or seed butter.
  • Feel free to omit the nuts or add in other nuts, seeds, dried fruit, or even chocolate chips if you like! Chocolate lovers may like to add chocolate chips on top, and after baking spread the melted chocolate into an even layer!
