- Dough Ingredients
2 cups whole wheat flour (plus some extra for your work surface)
2 teaspoons dry active yeast
1 tablespoon date syrup
1 cup warm water (no more than 110-115 degrees Fahrenheit)
- Cinnamon Sugar Ingredients
¼ cup date sugar
¼ cup cinnamon
- Monkey Mix Ingredients
¼ cup applesauce
¼ cup date syrup
1 tablepoon ground flaxseed
1 to 2 tablespoons cinnamon sugar mix
⅓ cup finely chopped walnuts (optional)
Directions
- Dough Preparation
- Proof the yeast by sprinkling it on top of the warm water and letting it sit undisturbed for 15 minutes.
- After 15 minutes, add the date syrup to the water and yeast mixture, and gently stir to combine.
- In a large mixing bowl, combine the 2 cups of flour with the yeast mixture. Stir with a wooden spoon until you have a uniform dough, and then form into a ball.
- Cover with a clean tea towl and set the bowl in a warm spot, such as on top of the oven. Allow to rise for about an hour, or until the dough has doubled in size.
- Cinnamon Sugar Preparation
- In a small bowl, whisk the cinnamon and sugar together until evenly combined and set aside for later.
- Monkey Mix Preparation
- In a small bowl, whisk together the applesauce and date syrup until well combined
- Add remaining monkey mix ingredients and stir to combine. Set aside for later.
- Assembly Directions
- Preheat oven to 150 degrees Fahrenheit (if your oven doesn’t go that low, just use the lowest temperature).
- Once the dough has doubled in size, transfer to a well-floured surface. Keep some extra flour nearby as needed because the dough will be sticky.
- Pinch off small pieces of dough and roll into balls about a half inch in size. It’s ok if they slightly vary in size.
- Once all the dough has been rolled into balls, take each piece and roll them in the cinnamon sugar mixture, and then set back out on your work surface.
- Once all the pieces are well-coated in cinnamon sugar, you can add any remaining cinnamon sugar to the monkey mix for an extra sweet final dessert. Or if you have less of a sweet tooth, you can save any remaining cinnamon sugar for the next time you make monkey bread.
- Spread a third of the monkey mix on the bottom of a silicone or parchment-lined bread loaf pan.
- Place half of the dough pieces in one layer on the bottom of the pan.
- Spread half of the remaining monkey mix evenly on top of the first layer of dough pieces. And then add a second layer of dough using all the remaining pieces.
- Spread the rest of the monkey mix evenly over the top layer, and then place the pan in the 150 degree Fahrenheit oven for 20 minutes to allow the dough to rise for a second time.
- After 20 minutes the dough should have doubled in size again. Increase the oven temperature to 375 degrees Fahrenheit and bake for 20 minutes.
- Allow the monkey bread to cool. Then you can scoop pieces out of the pan, or carefully flip the monkey bread out of the pan first and then peel the pieces apart. This can be eaten warm, but is also delicious cold!
