Italian Spaghetti Squash Casserole

Makes 2 to 4 servings
Ingredients
- 3 cups cooked spaghetti squash
- 15 ounce can no salt added tomato sauce
- 15 ounce can white beans (great northern or cannellini), drained and rinsed
- 1 tablespoon (or to taste) italian seasoning blend
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Spread the spaghetti squash in an even layer on the bottom of an 8 by 12 inch casserole dish. Feel free to season with a salt-substitute or salt and pepper to taste.
- Spread the beans on top of the squash.
- Mix together the tomato sauce and spices, then pour evenly over the top of the casserole.
- Bake for 30 minutes or until everything is heated through and the edges are bubbling.
Notes:
If you wanted to add a few extra ingredients here are some ideas:
- Add other spices to the tomato sauce such as dried onion flakes, granulated garlic, and red pepper flakes.
- Add a layer of spinach, kale, or any other veggies.
- Top the casserole with your favorite vegan parmesean recipe or some fresh herbs.
- Serve with your favorite whole grain or bean pasta, or feel free to swap out the spaghetti squash completely for pasta.
Mexican Spaghetti Squash Casserole

Makes 2 to 4 servings
Ingredients
- 3 cups cooked spaghetti squash
- 1 cup salsa
- 15 ounce can black or pinto beans, drained and rinsed
- 1 cup prepared cheesy sauce
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Spread the spaghetti squash in an even layer on the bottom of an 8 by 12 inch casserole dish. Feel free to season with a salt-substitute or salt and pepper to taste.
- Add the salsa over the squash in an even layer.
- Add the beans in an even layer.
- Spread the cheesy sauce evenly on top.
- Bake for 30 minutes or until everything is heated through and the edges are bubbling.
Notes:
If you wanted to add a few extra ingredients here are some ideas:
- Top with sliced black olives prior to baking.
- Serve with fresh herbs, guacamole, or a few jalapeƱo slices.
- Serve with your favorite whole grain such as brown rice, or swap the spaghetti squash completely.
Curry Spaghetti Squash Casserole

Makes 2 to 4 servings
Ingredients
- 3 cups cooked spaghetti squash
- 15 ounce can garbanzo beans, drained and rinsed
- 15 ounce can crushed tomatoes
- 1 or 2 teaspoons curry powder (or to taste)
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Spread the spaghetti squash in an even layer on the bottom of an 8 by 12 inch casserole dish. Feel free to season with a salt-substitute or salt and pepper to taste.
- Add the beans in an even layer on top of the squash.
- Combine the tomatoes and spices and then pour evenly over the top of the casserole.
- Bake for 30 minutes or until everything is heated through and the edges are bubbling.
