5 Days No Repeat Oatmeal : Apple Pie Oats

Yesterday I showed you how to batch cook oats so you have 5 servings ready to go for the week. For the next 5 days I’ll share different ways to enjoy those oats so breakfast is never boring! This first recipe makes me feel like I’m eating apple pie for breakfast!

I use the term “recipe” loosely. Think of it as a guide or template. Mix and match as you like, add or remove ingredients, and adjust portion sizes to suit your appetite. If you’re feeding a crowd, simply multiply the ingredients provided here by 5 and mix it all right in your instant pot after following the batch cooking instructions.

Apple Pie Oats

Cozy, comforting, apple pie-inspired oatmeal ready in minutes.

Ingredients

  • 1 portion cooked steel cut oats (or approximately 1 ½ servings per package directions)

  • 1 small apple (any variety), chopped (peeled or not is fine)

  • 1 medjool date, chopped

  • ½ teaspoon my oat spice blend or any combo of ground cinnamon, ginger, nutmeg, cloves

  • Splash pure vanilla extract

  • Optional: 1 tablespoon any nut butter (I like almond or cashew butter for this recipe)

  • Optional: Splash to ¼ cup water or plant milk (depending on how thick you like your oats)

  • Optional: 1 tablespoon chopped walnuts or pecans, or ground flaxseed

Directions

  • Scoop out a portion of your already prepped steel cut oats into a large, microwave-safe bowl. It will be pretty firm after being refrigerated, so smash it down or break it up a little with your spoon.
  • Add the remaining ingredients to the bowl. Microwave for about 1-2 minutes, depending on your microwave. 2 minutes is just right in mine.
  • Stir everything up and enjoy!

Notes

  • All amounts here are approximate. You can adjust everything to suit your own tastes. I never strictly measure, I just eyeball everything each day. There is no right or wrong way to do it!
  • This is sweet enough for me just with the chopped dates, but if you need to, feel free to add a little maple syrup or agave nectar.
  • If you’re watching fat intake, omit the nut butter and the nuts. It will be just as tasty!
  • If you do not batch cook the oats, you can also simply throw all the ingredients in a pot on the stovetop and cook per package directions with your dry steel cut oats. It will make your daily breakfast prep take a little longer, but doing this will make the apples softer and even more apple pie-like. Yum!
