This week we’re exploring different ways to enjoy your oatmeal. Get a wide array of nutrients from the variety of fruits each day, and the flavors keep your taste buds happy! It’s day two and this dynamic duo of fruits is one of my favorites: mango and blackberries. This combo is also great in smoothies!

Mango Blackberry Oats

minutesThis tangy sweet combo of mango and blackberries is so delicious and refreshing!
Ingredients
1 portion cooked steel cut oats (approximately 1 ½ servings per package directions)
½ cup frozen or fresh mango, chopped
½ cup frozen or fresh blackberries
1 medjool date, chopped
½ teaspoon of my oatmeal spice blend
Splash pure vanilla extract
Optional: 1 tablespoon any nut butter (I like almond, peanut, or cashew butter for this recipe)
Optional: Splash to ¼ cup water or plant milk (depending on how thick you like your oats)
Optional: 1 tablespoon chopped pecans or chia seeds
Directions
- Scoop out a portion of your already prepped steel cut oats into a large, microwave-safe bowl. It will be pretty firm after being refrigerated, so smash it down or break it up a little with your spoon.
- Add the remaining ingredients to the bowl. Microwave for about 1-2 minutes, depending on your microwave. 2 minutes is just right in mine.
- Stir everything up and enjoy!
Notes
- All amounts here are approximate. You can adjust everything to suit your own tastes. I never strictly measure, I just eyeball everything each day. There is no right or wrong way to do it!
- This is sweet enough for me with the chopped dates, but if you need to, feel free to add a little maple syrup or agave nectar for more sweetness.
- If you’re watching fat intake, omit the nut butter and the nuts. It will be just as tasty!
- If you do not batch cook the oats, you can also simply throw all the ingredients in a pot on the stovetop and cook per package directions with your dry steel cut oats. It will make your daily breakfast prep take a little longer, but doing this will make the fruit softer and syrupy. Yum!
