Batch Cooking Potatoes in the Instant Pot

This week I’m showing you how to make russet potatoes in the Instant Pot. Batch cooking potatoes to keep in the fridge is a great way to help you maintain a whole food plant-based diet. If you always keep them on hand, you’ll always have a healthy snack to reach for instead of junk food.

Batch Cooking Potatoes in the Instant Pot

Ingredients

  • Russet Potatoes

  • 1 cup water

Directions

  • Add the trivet or a steamer basket into the bottom of your 6 quart Instant Pot liner.*
  • Add 1 cup of water.
  • Arrange potatoes as needed to fit in the pot. You can cook one potato or as many potatoes as you can fit.
  • Secure the lid and make sure it is in the “sealing” position.
  • Set to cook at high pressure 12 to 18 minutes depending on potato size.*
  • Allow the Instant Pot to natural release at least 10 minutes and then quick release any remaining pressure.
  • Store cooled potatoes in the refrigerator for 3 to 5 days.

Notes

  • You can use a 3 quart or 8 quart Instant Pot to cook more or less potatoes.
  • Small potatoes: 12 minutes, Medium potatoes: 14 minutes, Large potatoes: 16 minutes, Extra large potatoes: 18 minutes.
