These taco-flavored lentils are a great item to batch cook and keep in the fridge or freezer. Add them to a nacho bowl, make some quick tacos, or simply throw them on top of rice or a baked potato with your favorite veggies for fast and easy meals.
Instant Pot Taco Lentils

1 cup dried black lentils, rinsed*
1 cup dried French lentils, rinsed*
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon dried chives
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon paprika
½ teaspoon black pepper
Optional: pinch of cayenne, chili flakes, or red pepper flakes
4½ cups liquid (water or vegetable broth)
1 cup oil-free and sugar-free salsa (your preference of mild, medium, or hot)*
Directions
- Add all the ingredients except for the salsa to your 6 quart Instant Pot.
- Stir to combine and then pour the salsa on top. Do not stir in to prevent the tomato from causing a burn warning.
- Set to cook at high pressure (manual or pressure cook button) for 6 to 8 minutes.
- Allow at least a 10 minute natural release before manually releasing any remaining pressure.
- Serve with nachos, tacos, or simply as a topping for a baked potato!
- Store leftovers in the fridge for up to 4 days or in the freezer.
Notes
- I like the combo of lentils, but feel free to use one or the other. If you can’t find these varieties, regular green or brown lentils will work too, they don’t hold their shape as well, but they’ll still be tasty! I do not recommend red lentils for this recipe as they will turn into a puree.
- Spice blend: Feel free to use your favorite taco spice blend instead of the spices in this recipe. This is just a sample. If using your own taco seasoning blend, use about 4 tablespoons instead of the spices listed above.
- If you are salt-free, you can use diced or crushed tomatoes instead of the salsa. I would add a little extra spices as well since you won’t be getting the spice from the salsa.
