Apple Cinnamon Cookies: Oil-free Vegan

A whole food plant-based treat you can feel good about eating!

Ingredients

  • Dry Ingredients
  • ½ cup whole wheat flour*

  • ½ cup chickpea flour*

  • ½ cup rolled oats

  • 2 tablespoons ground flaxseed

  • 2 teaspoons cinnamon

  • 1 teaspoon vanilla powder

  • ½ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ¼ cup date sugar or date powder

  • Optional: raisins (a couple handfuls or about ¼ to ½ cup)

  • Wet Ingredients
  • 1 cup unsweetened applesauce

  • 1 tbsp apple cider vinegar (or lemon juice)

Directions

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine dry ingredients in a mixing bowl.
  • Add wet ingredients and stir until just combined.
  • Scoop cookies onto parchment- or silicone-lined baking sheet. Using a 2 tablespoon cookie scoop, you should get about 15 cookies. You can leave cookies as is, or gently press to flatten them slightly.
  • Bake for about 12 to 15 minutes (cook longer for crunchier cookies if you prefer).
  • Enjoy warm out of the oven and store leftovers in the refrigerator or freezer.

Notes

  • For a gluten-free option: Use gluten-free rolled oats and substitute gluten-free oat flour for the wheat flour. You can also simply use 1 cup of chickpea flour or 1 cup of oat flour.
  • Feel free to use all wheat flour or all chickpea flour if you prefer.
