BBQ Tofu and Jackfruit: Vegan, Oil-Free

BBQ sandwiches are my favorite! And this BBQ tofu and jackfruit is so chewy, crispy, tangy, and delicious! Perfect for sandwiches or adding on top of baked potatoes or vegan mac and cheese.

BBQ Tofu and Jackfruit: Vegan, Oil-Free

Chewy, crispy, tangy and delicious! A perfect whole food vegan BBQ sandwich!

Ingredients

  • 1 block Super Firm or “high protein” tofu (14 to 16 ounces usually)*

  • 2 cans young jackfruit, drained and rinsed really well*

  • 1 to 2 cups BBQ sauce

  • Optional: Thinly sliced onions or bell peppers

Directions

  • Preheat oven to 400 degrees Fahrenheit.
  • Shred the tofu with a box grater, or simply crumble into small pieces and add to a large mixing bowl.
  • Squeeze excess liquid out of the drained and rinsed jackfruit. Pull the jackfruit apart into shredded pieces, or you can roughly chop it up and add to the bowl with tofu. If using, add sliced onions and bell peppers.
  • Add as much of your favorite BBQ sauce as you like and mix until everything is well coated. Feel free to save some sauce to add more at the end if desired.
  • Divide the mixture onto two parchment- or silicone-lined baking sheets and spread out evenly. Bake for about 20 minutes.
  • After 20 minutes, use a spatula to stir and flip the mixture around and spread it out evenly again. Then return to the oven and bake for about another 20 minutes or until the tofu and jackfruit is brown and crispy on the edges.
  • Serve on a whole wheat bun with your favorite toppings and enjoy!

Notes

  • You can substitute shredded oyster mushrooms for either the jackfruit or the tofu. Or feel free to do a combination of all three.
  • Make sure you find “young” or “green” jackfruit, NOT the sweet jackfruit in a sugary syrup.
