Easy Oil-Free Salad Dressing

More often than not, I’m simply using a splash of balsamic vinegar as a salad dressing. But when I want a little more, this is my go-to. It’s so easy you can make just enough for one salad, or make a large batch to use for several days.

I’ve written up the recipe below for the amount I usually make, but it’s simply equal parts of lemon juice, balsamic vinegar, and mustard. Then add date sugar or other sweetener and spices to taste.

This is great as an everyday dressing for any salad.

Or I love using it with a bag of coleslaw mix.

It’s also fantastic for a massaged kale salad. With the kale or coleslaw mix, you can add the dressing ahead of time and it will just taste better and better as it sits for a couple days in the fridge.

Easy Oil-Free Salad Dressing

Ingredients

  • 2 tablespoons lemon juice

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons dijon or stone ground mustard

  • 1 or 2 tablespoons date sugar (or other sweetener of choice)

  • Optional: Herbs and spices (see notes for ideas)

  • Optional: 1 to 2 tablespoons tahini

Directions

  • Add all ingredients to a jar.
  • Secure the lid and shake to combine.
  • Store in the fridge for 3 or 4 days.

Notes

  • Simply add a teaspoon or two of your favorite no-salt seasoning blend. Or add granulated onion and garlic plus your favorite dried herbs such as dill, parsley, or tarragon. Change it up every time you make the dressing!
  • Please note you can easily increase or decrease how much you make. It’s just equal parts lemon juice, vinegar, and mustard. Then add sweetener and spices to taste.
