Instant Pot Oatmeal – Steel Cut Oats

Ingredients

  • 2 cups steel cut oats

  • 5 cups water*

  • 1 can pumpkin puree*

  • 5 chopped medjool dates*

  • 2 teaspoons cinnamon or pumpkin pie spice

  • Optional Topping suggestions: blueberries, bananas, apples, nuts, seeds, nut butters, etc.

Directions

  • Add oats and water to a 6 quart Instant Pot.
  • Secure lid, and set to cook at high pressure for 6-8 minutes. This will take about 10 minutes to come up to pressure.
  • Allow the Instant Pot to do a full natural release, or at least allow about 10 minutes after it finishes cooking before doing a quick release.
  • Add pumpkin, dates, and spices and mix everything well.
  • Store in the refrigerator for up to 5 days. When ready to serve, add a little water or plant-based milk to achieve your desired consistency. Reheat for 2 or 3 minutes in the microwave and add fruit, nuts and seeds, or any other toppings you like!

Notes

  • Add more or less liquid for cooking. I like this ratio which makes a pretty thick oatmeal. As the oatmeal sits in the fridge all week, it absorbs excess water, so I prefer to add more water or plant-based milk while reheating individual portions to get the best consistency.
  • Feel free to use canned butternut squash or sweet potato puree in place of pumpkin. You can also chop up whole sweet potatoes in small cubes and throw them in to cook with the oats.
  • Any dates or dried fruit can work in place of the medjool dates. I like to use these as a whole food sweetener, but you could also add maple syrup, date syrup, date sugar, or any other sweetener you like, to taste.
