Oil-Free Balsamic Vinaigrette

Servings

Prep time

minutes

Ingredients

  • 1 cup water

  • 1 cup balsamic vinegar

  • 1 cup lemon juice

  • 1 heaping tablespoon stone ground or dijon mustard

  • 2 heaping teaspoons granulated garlic

  • 2 heaping teaspoons granulated onion

  • 1 heaping teaspoon dried dill

  • 1 heaping teaspoon of any salt-free seasoning blend

  • 2 tablespoons date sugar (or date syrup)

Directions

  • Add all the ingredients to a quart-sized mason jar.
  • Secure the lid and shake until everything is well combined.
  • If desired, you can transfer to another jar with a top that allows you to pour the dressing more easily. We like to use old Frank’s Hot Sauce jars.
  • Store in the refrigerator for up to a week.*

Notes

  • *This could possibly last a couple weeks in the fridge because it is very acidic and we are not using any fresh vegetable ingredients. But to be on the safe side we usually use it up in a week or less.
