It’s another what I eat in a day while I’m working from home. Check out the video to see my food and my daily routine and find the “recipes” below.
For breakfast I had my apple pie baked oatmeal which I shared with you a few weeks ago. I had that along with a smoothie. I added kale, frozen banana and mango, soybeans, cucumbers, celery, and water. I also added in some turmeric, ginger, black pepper, amla powder, and dulse flakes.
For lunch I had a salad, roasted red pepper and tomato soup, and an open faced sandwich with eggplant and white bean spread and veggies. I made the soup and spread last year with veggies from my CSA. This week I happened to get all the same veggies in my CSA again, so it was the perfect time to pull these recipes back out!
Along with lunch, I also warmed up a baked sweet potato and topped it with frozen cherries and dates. This is one of my favorite combos for a sweet treat!
Dinner was really quick and easy tostadas. I toasted some corn tortillas in my toaster oven and topped them with my taco lentils. Then I added lettuce, red onion, tomato, pickled peppers and a cheesy sauce. I made up a cheesy sauce using leftover mashed potatoes! So I just threw in some nooch, garlic and onion powder, and soymilk with my leftover potatoes, but you might also like to try my vegan rotel on top of tostadas.
