Vegan Rotel Dip

I used to love Rotel dip. It was such an easy and delicious snack. But it was filled with processed garbage! If you’re ditching the dairy and processed junk, but still want to bring back memories of Rotel dip, try this whole food vegan version!

Vegan Rotel Dip

Ingredients

  • Dip
  • 1 can no salt added great northern beans, drained and rinsed

  • 1 cup cooked sweet potato (steamed or boiled)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon smoked paprika

  • ¼ teaspoon ground turmeric

  • ⅛ teaspoon black pepper

  • ½ cup nutritional yeast

  • 1 tablespoon stone ground or dijon mustard

  • 1 tablespoon apple cider vinegar

  • Small handful soaked cashews (about 1 to 2 tablespoons)*

  • 1 cup water (more or less as needed to achieve your desired thickness)

  • 1 teaspoon salt substitute (I used Stardust by Well Your World)*

  • 1 can no salt added Rotel*

  • Tortilla Chips
  • Corn tortillas without salt or oil such as Mi Rancho Thincredibles

  • Equipment
  • High powered blender (for best texture) or a food processor

Directions

  • Add everything except the Rotel to your blender canister or food processor. Blend until smooth. It will take about 1 minute in a high powered blender, but may take a couple minutes in a food processor.
  • Transfer cheesy sauce to a large microwave safe bowl or a small saucepan.
  • Add Rotel to the cheesy sauce and stir to combine.
  • Heat at medium in a saucepan or microwave until hot.
  • Cut tortillas into triangles, lay out in a single layer on a silicone-lined baking sheet, and bake in the oven or toaster oven at 375 degrees Fahrenheit until crispy, 5 to 10 minutes depending on your oven. Keep a close eye on these as they can turn from crispy brown to black in a few seconds!

Notes

  • You can leave the cashews out or substitute 1 or 2 tablespoons of cashew powder if you’re avoiding high fat foods.
  • Feel free to either omit this or use any salt substitute or all purpose seasoning that you love. You can also use a pinch of salt instead if you desire.
  • If you can’t find the no salt Rotel you can substitute about a cup of finely chopped tomatoes plus one or two finely diced jalapenos or other spicy peppers or chilis.
