Italian Red Wine Vinaigrette

Ingredients
- ¼ cup golden raisins
- ¼ cup red wine vinegar
- ¼ cup lemon juice
- ½ cup water
- 1 raw garlic clove
- 1 tablespoon dijon mustard
- 1 teaspoon Italian Seasoning (optional)
- Salt to taste (optional)
Directions
- Add all ingredients except for Italian seasoning into small blender container, and allow the raisins to soak for about 20 minutes to soften.
- Blend until smooth.
- Add Italian seasoning, if using, and shake or stir to combine. Then taste and adjust seasonings as needed.
Chili Lime Mango Dressing

Ingredients
- 1 cup mango chunks (fresh or frozen)
- ¼ cup lime juice
- 2 tablespoons rice vinegar
- ½ cup zucchini flesh
- 1 teaspoon to 1 tablespoon maple syrup
- ¼ to 1 teaspoon chili powder (start with less and add more to taste)
- Salt to taste (optional)
Directions
- Add all ingredients into small blender container, and blend until smooth.
- Taste and adjust seasonings as needed.
Creamy Roasted Garlic Dressing

Ingredients
- ¼ cup walnuts
- 1 medjool date
- ½ cup white beans
- 3 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- ½ cup water
- 1 tablespoon stone ground mustard
- 1 tablespoon roasted garlic
- 1 teaspoon Italian seasoning
- Salt to taste (optional)
Directions
- Soak the walnuts in water for about 20 minutes.
- Add all remaining ingredients except for Italian seasoning into small blender container, and allow the date to soak for about 20 minutes while you wait for the walnuts to soak.
- Drain the water from the walnuts and and them into the blender container.
- Blend until smooth.
- Add Italian seasoning and stir to combine.
- Taste and adjust seasonings as needed.
Avocado Herb Dressing

Ingredients
- 1 small avocado
- 1 raw garlic clove
- 1½ cups loosely packed fresh herbs (any combo of parsley, basil, cilantro, dill, etc)
- ¼ cup lemon juice
- ½ cup water
- 1 tablespoon date sugar (more or less to taste)
- Black pepper to taste
- Salt to taste (optional)
Directions
- Add all ingredients into small blender container, and blend until smooth.
- Taste and adjust seasonings as needed.
