Easiest Stuffed Poblano Peppers

Ingredients

  • 4 poblano peppers (or bell peppers), halved and de-seeded

  • 2 cups cooked quinoa

  • 15 ounce can lentils or other beans (or about 1½ cups cooked beans)

  • ½ to 1 cup salsa (more or less to taste)

  • 1 cup cheesy sauce (or other vegan cheese substitute of choice)

  • Optional garnishes: cilantro, raw onions, lettuce, tomatoes, guacamole, salsa

Directions

  • Preheat oven to 375 degrees Fahrenheit.
  • Place pepper halves on a parchment-lined baking sheet with the skin side down.
  • Add quinoa, beans or lentils, and salsa to a large mixing bowl. Stir to combine.
  • Divide this mixture between all the pepper halves.
  • Top the stuffed peppers with cheesy sauce (or other cheese substitute).
  • Bake for 20 to 30 minutes until the peppers are done to your desired texture. I like to cook until they are soft enough to cut with a fork.
  • Serve immediately with optional garnishes.
