Quick Ramen Stir Fry with Peanut Sauce – Vegan

Ingredients

  • Peanut Sauce Ingredients
  • 1 cup peanuts

  • ½ cup water

  • 2 limes, zested and juiced

  • 1 orange zested and peeled

  • 2 large garlic cloves

  • 1 tablespoon fresh ginger, roughly chopped

  • 2 tablespoons rice vinegar

  • Optional: 1 tablespoon soy sauce, tamari, or coconut aminos

  • Optional: 1 tablespoon maple syrup

  • Optional: ½ to 1 jalapeño

  • Stir Fry Ingredients
  • 2 bricks Lotus Foods millet and brown rice ramen

  • 1 to 2 12-ounce bags frozen stir fry veggies

  • 15-ounce can chickpeas, drained and rinsed

  • Optional garnishes: fresh herbs, green onions, chopped peanuts

Directions

  • Add all of the peanut sauce ingredients to a small high-powered blender container and let sit for about 10-15 minutes while you prepare the remaining ingredients.
  • Bring a pot of water to boil and cook noodles per package directions.
  • Meanwhile, add the frozen veggies and chickpeas to a large skille with about a tablespoon of water. Cover and steam for about 7 to 10 minutes.
  • Once the veggies and noodles are done cooking, drain the noodles and add them to the skillet.
  • Blend the sauce. Taste and adjust seasoning. If it is too thick, add a little more water and blend again.
  • Add as much of the sauce as you like to the skillet and mix everything well. Cook for 2 or 3 minutes until the sauce is to your desired thickness.
  • Serve with fresh herbs and chopped peanuts.
