Ingredients

  • Dry Ingredients
  • 3 cups rolled oats

  • 1 cup whole wheat flour

  • 1 cup date sugar

  • 2 teaspoons vanilla powder

  • 3 teaspoons cinnamon

  • 1 teaspoon baking soda

  • 2 teaspoon baking powder

  • ¼ cup powdered almond butter

  • ½ cup carob powder (or cocoa powder)

  • Optional: ½ cup chopped pistachios

  • Wet Ingredients
  • 6 tablespoons aquafaba (liquid from chickpeas)

  • 1 cup plant-based milk (I use soymilk)

Directions

  • Preheat oven to 350 degrees Fahrenheit.
  • Add all dry ingredients to a mixing bowl and stir to combine.
  • Add wet ingredients to the dry ingredients and stir until everything is just combined.
  • Scoop onto silicone or parchment-lined cookie sheet using a 2 or 4 tablespoon cookie scoop.
  • Bake for about 10 to 15 minutes, until cookies are slightly brown on the bottom and easily lift off the tray.
