Realistic What I Eat in a Day: Whole Food Plant-Based

In this video I show you a typical day eating whole plant foods! From my regular breakfast of oatmeal to my tacos for dinner. Eating plant is always filling and delicious!

Breakfast

No surprises for breakfast! I ate my usual blueberry oatmeal and green smoothie.

Today’s smoothie included 5 ounces of power greens, small rib of celery, half a cup english cucumber, ⅓ cup cooked soybeans, half a frozen banana, about ¾ cup frozen mango, and about 2 cups water.

I also added some fresh ginger along with my usual smoothie add-ins: amla powder, turmeric, dulse flakes, and black pepper.

Lunch

Next, I made a giant salad with lettuce, purple cabbage, bell peppers, tomatoes, cooked purple barley, pumpkin seeds, and goji berries. I topped it with my hummus mixed with the ginger garlic salad dressing below.

Along with it I had a baked jersey sweet potato. I bake these for about an hour at 400 degrees Fahrenheit and then keep in the fridge all week.

Dessert was apple slices with my brownie dip!

Ginger Garlic Salad Dressing

Ingredients

  • 2 tablespoons lemon juice
  • 3 tablespoons balsamic vinegar
  • 1 garlic clove, grated
  • 1 teapsoon grated fresh ginger
  • 2 tablespoons date sugar
  • ¼ cup water

Directions

  1. Add all ingredients to a pint-sized mason jar.
  2. Secure the lid and shake to mix.
  3. Store in the fridge for up to a week.

Dinner

Tacos for dinner? Yes please! I used corn tortillas, black beans, lettuce, cabbage, peppers, tomatoes, black olives, salsa, and cheesy sauce.

Finally, I was still hungry so I followed it up with a bowl of hashbrown potatoes with more cheesy sauce and salsa. Plus some broccoli with the rest of the cheesy sauce, and some more black beans.
