This pizza casserole is one of my new favorite meals! I love regular pizza, but it can be a hassle to make the pizza crust. And on my whole food vegan diet, it’s hard to find healthy store-bought crusts.
Using this noodle base for the casserole is a perfect quick solution! Check out the video to see how easy it is to assemble this casserole and find the full recipe below!
Pizza Casserole
As written this makes about 2 or 3 servings for me (but I eat pretty large servings). You may be able to get up to 6 servings. But feel free to double if you need more!
Ingredients
- 2 or 3 bricks of millet and rice ramen noodles (I use Lotus Foods brand)
- Pizza Sauce or a jar of Well Your World SOS-Free Pizza Sauce (about 1 or 2 cups to your taste)
- Optional: 1 to 2 cups cooked black lentils
- Pizza toppings! My suggestions are:
- variety of colored bell peppers
- onions
- mushrooms
- Vegan Cheese Sauce
- Optional: sliced black olives
Directions
- Start by preparing all the toppings (chopping or slicing as you like).
- Prepare your pizza sauce if you aren’t using a pre-made sauce.
- Cook noodles per package directions.
- Preheat oven to 350 degrees Fahrenheit.
- Spread cooked noodles evenly across the bottom of an 8 by 12 inch casserole dish.
- Top with your prepared pizza sauce. You can add as much as you like, I used about half a jar.
- If using store-bought sauce and you want the optional lentils, add those next (if you use my pizza sauce it will already have lentils).
- Then add a layer of your desired toppings.
- Next drizzle or spread as much vegan cheesy sauce over the top as you like.
- Add black olives, if using.
- Bake for 25 to 35 minutes until the veggies are cooked through.
Mom’s Plant-Based SOS-Free Pizza Sauce
Ingredients
- 15 oz can low sodium tomato sauce
- 6 oz can low sodium tomato paste
- 1 or 2 cup(s) cooked black lentils or any firm lentils
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dry basil
- 1 teaspoon dry oregano
- 1 teaspoon Italian seasoning mix
- Optional: Well Your World Stardust or other salt substitute and black pepper as desired
Directions
- Mix all ingredients together and use in recipes as needed.
Vegan Cheese Sauce
Ingredients
- 1 can no salt added great northern beans, drained and rinsed
- 1 cup cooked sweet potato (steamed or boiled)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ¼ teaspoon ground turmeric
- ⅛ teaspoon black pepper
- ½ cup nutritional yeast
- 1 tablespoon stone ground or dijon mustard
- 1 tablespoon apple cider vinegar
- Optional: small handful cashews, soaked; or 1 to 2 tablespoons of PB2 cashew powder
- 1 cup water (more or less as needed to achieve your desired thickness)
- 1 teaspoon salt substitute (I used Stardust by Well Your World)
Directions
- Add everything to your blender canister or food processor. Blend until smooth. It will take about 1 minute in a high powered blender, but may take a couple minutes in a food processor.
