Taco Salad Template

Taco salad or nacho bowls are my favorite go-to meals. They are so easy to throw together, are really versatile, and are always delicious.

Meal Template

  1. Start with a bed of greens. I like romaine, iceberg, spring mix, or any combo of your favorite lettuce and greens.
  2. Then add on my taco lentils and/or another bean. Black beans and pinto beans are my top choices for taco salad.
  3. Next add some chopped veggies. My favorites are onions, bell peppers, tomatoes, and jalapeƱos. But use whatever you love.
  4. Bulk it up with some kind of starch. My go-to options are brown rice and oil-free corn tortilla chips. But any kind of whole grain could work. And I love serving it with roasted potatoes or sweet potatoes.
  5. Then add some kind of sauce. I love to use salsa and my basic cheesy sauce or my Rotel cheesy sauce. You could also add a vegan sour cream, guacamole, or pico de gallo.
  6. Finally get creative and change it up however you like. Some other ideas include low sodium black olives, avocado slices, pickled onions or peppers, fire-roasted corn, lime juice, fresh cilantro, scallions, or other herbs.
