Taco salad or nacho bowls are my favorite go-to meals. They are so easy to throw together, are really versatile, and are always delicious.

Meal Template

- Start with a bed of greens. I like romaine, iceberg, spring mix, or any combo of your favorite lettuce and greens.
- Then add on my taco lentils and/or another bean. Black beans and pinto beans are my top choices for taco salad.
- Next add some chopped veggies. My favorites are onions, bell peppers, tomatoes, and jalapeƱos. But use whatever you love.
- Bulk it up with some kind of starch. My go-to options are brown rice and oil-free corn tortilla chips. But any kind of whole grain could work. And I love serving it with roasted potatoes or sweet potatoes.
- Then add some kind of sauce. I love to use salsa and my basic cheesy sauce or my Rotel cheesy sauce. You could also add a vegan sour cream, guacamole, or pico de gallo.
- Finally get creative and change it up however you like. Some other ideas include low sodium black olives, avocado slices, pickled onions or peppers, fire-roasted corn, lime juice, fresh cilantro, scallions, or other herbs.
