Nutritarian What I Eat in a Day

Today I tried following Dr. Fuhrman’s “Nutritarian” style of a whole food plant-based diet. Watch on YouTube to see how it went and see the details of what I ate below!

The Nutritarian Diet emphasizes eating lots of raw and cooked veggies, plus some fruit, beans, nuts or seeds, and a few whole grains. For an easy way to remember some of the healthiest foods, Dr. Fuhrman came up with “G-BOMBS.” This stands for Greens, Berries, Onions, Mushrooms, Beans, and Seeds and nuts.

Breakfast: Rolled Oats and Smoothie

I had my usual breakfast with a Nutritarian twist. Oats with berries and omega-rich seeds like flax, chia, and hempseeds are recommended on a Nutritarian diet. I always eat oats anyway so today I added raspberries, blueberries, flax, and chia.

Then I also always have a smoothie and I’m a creature of habit, so I couldn’t resist also having my smoothie today. But the Nutritarian diet also emphasizes getting about a pound of raw veggies in a day. So my smoothie was a great way to get some greens and other veggies in.

Lunch: Sweet and Sour Chickpeas

Many Nutritarians have a giant salad for one meal of the day. But Dr. Fuhrman also recommends soups and stir fries. So for lunch, I did salad and a stir fry. I ate leftovers of my Sweet and Sour Chickpeas with sorghum. This recipe alone includes four GBOMBS: greens, onions, mushrooms, and beans!

Along with that I had a salad full of tons of fresh veggies and topped with seeds. Plus, I had an apple for dessert.

Dinner: White Bean and Kale Soup

Finishing the day off was an easy white bean and kale soup. Dr. Fuhrman recommends soup as a great way to cook in bulk and make sure you’re getting all those great veggies in. This soup included three G-BOMBS: greens, onions, and beans. I plan to share how I made this recipe in the coming weeks, so stay tuned!

With dinner I also had some sauteed purple cabbage, watermelon, and some homemade sprouted whole wheat bread.
